Since going back to work full time two weeks ago, I made a resolution to prep as much as possible on Sunday and to bring my lunch to work. So far I’ve been successful with both and I thought this would be a perfect place to tell you how I do it!
Before I go to the store, I create a basic meal plan for the week. I love to use Pinterest for inspiration and new recipes. Having the fridge stocked for the week is the only way we don’t resort to take out every night. And since there’s not a lot of time to actually make dinner once I get home, I rely on simple and healthy recipes: pasta primavera, grilled chicken and veggies, burrito bowls or hamburgers.
The other meal of the day I make sure is always ready to take on the road is breakfast. I’ll be honest, getting out the door on time in the morning means everything has to go pretty smoothly. I make these oat muffins or these quinoa bars or these green smoothie bars on Sunday. They’re perfect to grab on the go or pack as a snack for later. The best part is that my daughter loves them and since they’re loaded with so many good things, I know she’s eating something healthy. I also have everything for a smoothie on hand: frozen mango, pineapple, blueberries and strawberries and then I add dates, spinach, an orange and a banana.
It’s so important for me to prepare all this before the week starts because I want the morning and night routine to be as fun as possible for my kids. I don’t want to start the day in complete chaos!
