My favorite quick and healthy breakfast

In my house, the morning rush can be a little chaotic. After we get the kids up, fed, dressed and out the door, it doesn’t leave much time for us to make breakfast for ourselves. Breakfast is the most important meal of the day, and I wouldn’t be able to function if I didn’t have a hearty one. Especially since I run early in the morning.

After attempting a few different grab-and-go breakfasts (pre-made egg and sausage muffins, protein muffins…etc) I’ve finally found something that’s not only easy, but healthy and hearty enough to get me through to lunch. I can’t take full credit for this though, my sister in law introduced me to this and makes it every time she stays with us!

The best part about this is that you can make it however you want. I don’t measure anything! Here are my key ingredients:

  • Oats
  • Raisins
  • Walnuts
  • Cinnamon or pumpkin spice mix from Trader Joe’s
  • Flax seed
  • Chia seeds
  • Sliced banana
  • Spoonful of peanut butter

After I place all this to a bowl, I add water and a little milk to the top and then throw it in the fridge and let it sit overnight. In the morning I microwave it and mix everything together. It’s SO delicious! Give it a try and let me know how you like it!
